I hope you all had a great Easter! This weekend was jam-packed, with me volunteering at church all Easter weekend. I barely had time to breathe, let alone get all my meal prep done. I only had time to make my meals for Sunday and some snack boxes (See my Facebook post in case you missed it!).

It’s Spring Break this week for Allison, which means we get to find fun things to do together! Somehow, even though she goes to school just in the morning, we can’t seem to find time to go on fun outings. I asked her what she wanted to do this week, and she said “Spring cleaning!”. So this could mean a few things:

  • I’m a slob
  • Allison’s gone crazy
  • She really does want to help

In any case, it looks like we’ll be doing some cleaning this week!

But I think the best part about the entire week is: WE’RE GOING TO KINGS ISLAND ON SATURDAY!!! This past weekend was the official opening, and we get a chance to go this Saturday. I can’t even tell you how pumped we all are- especially Allison, who I think has grown the extra inch needed to ride a couple more rides. Expect to be flooded with photos in the near future.

Miscellaneous
Made this Gluten Free Carrot Cake for Easter- I used a leftover Wal Mart gift card to buy a small bag of gluten free all-purpose flour

This week is in the 90's in California, so I'm trying out a recipe you linked before: lentil sloppy joes made in the crockpot! The recipe was so simple. Can't wait to see how they turn out! I'm also going to try the Healthy Alfredo Sauce with a few substitutions!

Holy cow, the 90's? Good luck! =) I still love making those Lentil Sloppy Joes, they're so good!
