Week 2 of my 4 Weeks to Fill Your Freezer challenge is all about lunches!

Whether you go to work or stay home with your kids every day, lunch can be one of those meals that can take time to prepare. My goal is to give you some ideas of lunches that you can pull out and have ready by lunchtime!

To be honest, it feels weird for me to cook lunches. As a family of 3, I usually cook enough food that we have leftovers for lunch every day. But there are the odd times when we happen to have no leftovers!

But the good thing about these lunches is that they can also double as simple dinners. Just add a couple veggies and you can have a good, well-rounded meal!

I tried to make these lunches as simple as possible. Most of them are either wrapped in a tortilla or baked inside dough, so they’re not really messy. And the Santa Fe Chicken bowls are in containers so those are easy to just pull out as well.

Once again, you don’t have to make these exact recipes! I’m just here to give you ideas. If you need to modify anything, please do so and let me know what you decided to change!

Freezer Ham and Cheese Pockets

Slow Cooker Mexican Burritos

Pepperoni Pizza Pockets

Cream Cheese Chicken Chimichangas

Santa Fe Chicken Bowls

Grocery List

  • 3 pounds chicken breasts
  • 2 jars salsa
  • 5 ½  cups shredded cheddar
  • 1 ½ cups shredded mozzarella
  • 2 packets taco seasoning
  • 16 tortillas
  • 4 tablespoons olive oil*
  • 2 teaspoons salt*
  • 6 cups all-purpose flour*
  • 2 tablespoons active dry yeast* (Or buy 2 cans pizza dough instead of the ingredients with an asterisk)
  • 1 1/2 cups diced ham or 1 8-ounce package deli ham
  • 1 package pepperoni
  • 1 jar pizza sauce
  • (Optional) Pizza toppings for pizza pockets
  • 2 8-ounce blocks cream cheese
  • 2 cups uncooked rice
  • 1 can black beans
  • 1 can corn
  • 1 jar pizza sauce

Freezer Items

  • Plastic wrap
  • 4 gallon-sized freezer bags
  • 6 freezer-safe containers
