$75 Weekly Shopping and Menu 1-21-19

I think I’m done with all this snow now!

Two weekends in a row we’ve been hit with a snowstorm. This weekend was a mixture of rain, ice, and, snow which was totally nuts! I did all my grocery shopping on Friday along with everyone else; and judging from what I bought, I  think we’re good for quite awhile.

Today is day 12 of our 21-day Daniel Fast, so this week is still a strict vegan menu. Next week will be a mixture of both and then will return to my regular menu! 

I’m actually pretty amazed at how much I can buy. I mean, I pretty much filled my cart with vegetables at Aldi and the total came to only $55. Eating vegan can be pretty cheap if you’re smart!

Here’s what I ended up buying this weekend:

5 boxes Simple Truth date bars (Generic Larabars): $1.99 each. This was a great price, I had to stock up!
2 containers vegetable broth: $1.99 each

Weekly Total: $76.70. I used all the overage from the previous week buying miscellaneous foods we needed last week.

Lunch is always leftovers. Items marked with an asterisk (*) were purchased in previous weeks.

Dinner
Weeknight Black Bean Chili (Without the meat)
Veggie Stir Fry
Stuffed Peppers
Lentil Sloppy Joe mix over baked potatoes
Burrito bowls (Brown rice, black beans, lettuce, tomatoes, guacamole)
Vegetable soup
Refried beans with tortilla chips, roasted zucchini- Putting a pound of dried pinto beans in my Instant Pot for 25 minutes, then mashing them and mixing with salsa.

Breakfast
Roasted potato and broccoli hash
Overnight oats (Almond milk, chia seeds*, oats*, peanut butter, sliced bananas)
Carrot Pancakes for Allison

Crackers*, salami, string cheese*, strawberries, Pumpkin Zucchini Bread
