Do you like making your own salsa?
To be honest, I don’t do it often. It’s pretty convenient to just buy a jar.
But this recipe for Pico de Gallo… oh my goodness. It’s just like my favorite burrito shop.
It’s full of tomatoes, red onion (my favorite), cilantro, and fresh jalapeños. Mixed up with lime juice and salt, this Pico de Gallo is quickly becoming a must-make recipe for me.
And it only takes about 10 minutes to put together, too. Combine all the ingredients in a bowl, and either serve immediately or put it in the fridge for awhile (It gets better the longer it sits).
I ate mine with tortilla chips, but also topped it on my Alpha Burrito. I had just finished an hour and a half meal prep session that day and didn’t want to do a lot of cooking; so 90 seconds in the microwave later, I had dinner ready!
Alpha burritos are completely plant-based but have around 11 grams of protein per burrito- that’s amazing and good news, especially since I have a high-protein diet. They come in 4 different flavors; I had the Fajita Chick’n and it actually tasted meaty, it was so good! John ate the Pizza burrito and agreed it tasted like a cheesy pizza, but without the dairy and meat.
Sometimes you just need a quick meal, and Alpha Burritos saved my sanity. It helps that these are healthy and full of vegetables, and pair nicely with a roasted vegetable and some fruit as well.

Spicy Pico de Gallo
Making your own pico de gallo is easy! Add this delicious fresh salsa as a side to any Mexican dish, to top a burrito or eat with tortilla chips!
Ingredients
- 3 cups chopped tomatoes (About 3 medium)
- 1 cup chopped red onion
- 2 chopped fresh jalapenos
- 1/4 cup fresh cilantro
- 2 tablespoons lime juice
- 3/4 teaspoon salt
Instructions
- Combine all ingredients in a large bowl. Serve right away or cover and store in the fridge until needed.

I actually had a gluten free burrito today! I made a avocado, corn and black bean salsa and topped it over grilled chicken, lettuce, jalapeƱos, and rice!! I only ate half and will eat the other half for dinner!!

I've never heard of Alpha brand but the flavors sound delicious! We always add guacamole and hot sauce to burritos! I'm going to start checking stores for these. Are they frozen?
