My parents gave us an air fryer a couple months ago, and I’ll be honest- I wasn’t quite sure how to use it. Or how good it would be. I mean, we don’t eat much fried food at home so I didn’t think we’d use it much.

Soon after, I realized just how much you can DO with an air fryer. Like roast vegetables without having to turn on your oven. Both fresh vegetables AND frozen. Guess who now has a permanent spot on the kitchen counter?

Seriously, though, I’m now hooked on this air fryer. And one of the first things I did was roast up some sweet potatoes. Here’s all you need:

Air Fryer Sweet Potatoes

  • 2-3 pounds sweet potatoes
  • Cooking spray
  • 1/2 teaspoon garlic powder (Or your favorite seasoning)
  • Salt and pepper, to taste

Start by scrubbing and washing your sweet potatoes.

Chop them into small pieces, as even-cut as possible. You’ll really want to do this, because the bigger pieces won’t cook as fast and the smaller ones will get burned in the process.

Place the sweet potatoes in the air fryer, give them a quick spray with the cooking spray, and shake the basket a couple times. Sprinkle the salt, pepper, and garlic powder on the sweet potatoes, spray again with cooking spray, and shake the basket again.

Slide the basket into the air fryer and set it to cook at 400 degrees for 20 minutes. Now, the thing you have to remember with the air fryer is that you have to pull out the basket and shake it every 5 minutes or so, so the food cooks evenly and doesn’t all get burned on top.

Once the timer goes off, check the potatoes with a fork. If they’re not done, put them back in for 5 minutes until they’re crisp on the outside but soft on the inside.

These sweet potatoes are so amazing! I served them with chicken burgers and frozen veggies, and it was a very minimal effort dinner. Perfect for those nights when you’re tired and don’t want to do much!
