Why Use Frozen Hash Browns?
I use frozen hash browns because it saves me a ton of time!
I don’t mind dicing potatoes, but it adds an extra 10 minutes or so and I don’t always want to use up my time that way.
And I have ADHD, so the less I have to do the better.
You can certainly use fresh potatoes if you want. But I like doing this as a time-saver!

Ingredients
- Frozen diced potatoes
- Chicken broth
- Creole seasoning– This is my favorite, but you can always substitute it for other favorite seasonings!
- Green onions
- Shredded cheddar cheese
Additions/Substitutions
- Seasonings: Feel free to use one of your favorite blends!
- Broth: You can use vegetable broth instead to make this recipe vegetarian.
- Fresh potatoes: You’ll need about 2 pounds of potatoes if you want to dice your own.

How to Make 5-Ingredient Potato Soup
Dump the ingredients and cook
In your slow cooker, add the diced potatoes, chicken broth, and seasoning. Place the lid on top and cook on LOW heat for 4-6 hours until the potatoes are softened.
Blend or mash the soup
Using a potato masher or immersion blender, mash the potatoes until the soup becomes a creamy consistency.
Add in the shredded cheese and green onions, and stir.
Divide and serve
Divide into 4 bowls and serve with any of your favorite toppings.

How to Store
Once this soup has cooled to room temperature, store any leftovers in an airtight container in the fridge. Use up within 5 days.

Usually, mashing the potatoes helps to thicken the soup. And when the soup is in the fridge, it definitely thickens more!
However, you can actually add instant potato flakes to make the soup a bit thicker. My grandma used to do that with her broccoli cheese soup!

You can add a few things to make this soup a little creamier:
- Add a half block of cream cheese
- Add a 1/4 cup of sour cream (After the soup is cooked)
- Add about a 1/2 cup of heavy cream
