Wow, is it almost the end of July already? And summer? Although this heat has been almost unbearable at times, I’ve really been enjoying this summer vacation. We’ve gone on trips, visited new parks, and just altogether having a blast with family.
But in 23 days (Yes I counted), Allison starts Kindergarten. WHAT. It’s already time to start buying school supplies, and this will be my first time officially doing so and I might cry.
I mean, this is the big kid school now. Allison will be in school ALL DAY LONG. She’s ready for it, definitely, and so am I. But wasn’t it just yesterday she was my (Not-so-little) 10-pound baby?
So over the weekend I made some freezer meals! My goal is to do this once a month for the next 3 months, and do something different each time. This month was all ground turkey, and I haven’t put any thought into the others yet. I made:
- Stuffed pepper casserole
- Turkey chili x2
- Sloppy Joe mix
- Taco meat
- Meatballs
Six meals made in exactly one hour! Not too shabby. I’ll have the entire freezer meal plan up and ready in the next couple weeks, so stay tuned for details!

How do you like the air fryer? I put a bid on one at a silent auction I attended this weekend, but didn't win. I'm still thinking about purchasing one (or asking for one for my birthday!). What brand and capacity is yours? PS. I remember the first day of Kindergarten for my son. Before his teacher ushered the parents out of the classroom, she said "You are looking at the WHS graduating class of 2023!" I bawled all the way to the car! He will be a freshman this year : ) It just all goes by too fast.
