Today I’m sharing a simple breakfast recipe for your toddler! Notice how I said your toddler and not mine. My child used to love scrambled eggs with shredded cheese; she would eat one every morning without question and it was wonderful. Then suddenly she stopped eating them, like at all. She’d pick some of the cheese off the top and then declare herself done. I’ve been thinking of ways to actually get protein in her because she doesn’t eat meat; she’s like a vegetarian that doesn’t eat vegetables! I made these mini egg cups hoping they’d be new and wonderful for her to eat, and it was a bust. But I thought I’d share with you anyway to give you a new idea for your toddler!
It’s a very simple recipe; just add 6 eggs, 1/2 cup of milk, and a 1/2 cup of shredded cheddar cheese. Add some salt and pepper if desired, and whisk it thoroughly.
Pour the mixture into a mini muffin tin; mine made about 20 mini muffins. Make sure you get some cheese in each one; all of my cheese remained at the bottom and the last few got huge globs of cheese! Bake at 350 for about 15 minutes or until the eggs set.
They really did turn out good! I gave Allison one after they came out of the oven, and she ate about 3/4s of one before spitting out the last bit and giving it back. Toddlers.
I suppose you could add more things to this to make them more palatable, like mushrooms (Allison’s favorite!) or black olives or anything else your toddler might eat. I’ll experiment with this and let you know if she eats them again!
