I think Mexican food is one of our favorite food themes in this family. I make burritos, rice and beans, etc., at least once a week here, if not more. Unfortunately, I get into this habit of making the same things over and over again, so I looked for something to actually get us excited for dinner! I found this recipe from I Heart Naptime and just took out the jalapenos for Allison. It... was... delicious! I almost licked the slow cooker clean, this recipe is so dangerous.
What you need: 8 ounces cream cheese
1 tablespoon butter
1 pound white American cheese
1 can diced green chiles
3-4 tablespoons milk
Cut up the American cheese and cream cheese and place them in the slow cooker with the green chiles and butter. Cook on high for 30 minutes, then stir in the milk 1 tablespoon at a time until it reaches the desired consistency. Cook for another 15-20 minutes until the cheese is melted fully combined.
So delicious! Enjoy with tortilla chips, or do what we did and use it in your burritos.
