That’s why I love freezer meals! With a little bit of work ahead of time, you can have dinner on the table on busy weeknights and not worry about all the cooking involved.
I have ADHD, and my energy gets low pretty often. So if I already have dinner prepared and can throw it in the oven, I consider that a win.

This Ground Beef Enchilada Casserole is freezer friendly, full of protein, and so much easier to make than standard enchiladas.

Ingredients
- Ground beef
- Taco seasoning
- Canned diced green chiles
- Red enchilada sauce
- Fajita-sized flour tortillas
- Frozen corn
- Canned black beans
- Shredded cheddar cheese
Other Additions/Substitutions
Need to make a few changes? No problem! Here are some things you can do instead:
- Meat: Use ground turkey or ground chicken instead
- Corn: Use canned corn, drained, instead
- Cheese: Use a taco-blend instead of plain cheddar
- Taco seasoning: Make your own if you’d like. I use a store-bought bottle, where 3 tablespoons equals one packet.
- Vegetarian: Omit the meat and use an extra can of beans instead.
Can I Use Green Enchilada Sauce Instead of Red?
Yes, I think that would be amazing! Just use a 1:1 ratio and it’ll still turn out great.
Corn Tortillas vs. Flour Tortillas
You can use either corn or flour tortillas, depending on your preference. They’re just laying flat in the casserole dish, so you don’t have to worry about rolling them up.

How to Make Enchilada Casserole
Cook ground beef
Preheat the oven to 350 degrees F.
In a large pan, cook the ground beef until fully browned. Add taco seasoning and green chiles and let simmer for 5 minutes.
Layer the casserole
In the bottom of a greased 9×9 casserole dish, layer half of everything: The tortillas, meat, enchilada sauce, corn, black beans, and cheese. Repeat once.
Bake and serve
Bake for 30 minutes until heated through and the cheesy is bubbly. Divide and serve with your favorite side items.
How to Freeze
You can freeze this baked or unbaked! Either way, the process is the same.
- Let the casserole cool to room temperature.
- Cover the top with aluminum foil and use a marker to write the recipe name, the date, and cooking instructions.
This enchilada casserole will stay fresh in the freezer for up to 3 months. It’s still safe to eat after that, but you just risk it getting freezer burn.
How to Thaw and Reheat
Put the casserole in the fridge overnight to let it thaw completely.
- If you didn’t bake before freezing: Cook at 350 degrees F for 30 minutes.
- If you baked it already before freezing: Cook at 350 degrees F for about 20 minutes until heated through.

This Freezer Enchilada Casserole is made with ground beef and so easy to put together. Perfect for busy weeknights!
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 7-ounce can diced green chiles
- 15-ounce can enchilada sauce
- 4 fajita-sized flour tortillas
- 6 ounces frozen corn
- 15-ounce can black beans
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees.
- In a large pan, cook the ground beef until fully browned. Add taco seasoning and green chiles and let simmer 5 minutes.
- In the bottom of a greased 9x9 casserole dish, layer the tortillas, meat, enchilada sauce, corn, black beans, and cheese. Repeat once.
- Top the casserole with the remaining enchilada sauce and cheese.
- Bake for 30 minutes until the cheese is bubbly. Serve with your favorite side items.

- To freeze (Unbaked or baked): When the casserole has cooled to room temperature, cover the top with aluminum foil and label with the recipe name, date, and cooking instructions. Will stay fresh for up to 3 months.
- To reheat (Already baked): Thaw in the fridge overnight. Bake at 350 degrees for 20 minutes until heated through.
- To reheat (Not yet baked): Thaw in the fridge overnight. Bake at 350 degrees for 30 minutes until heated through and the cheese is bubbly.
