Week 3 of our birthday theme features a unique type of birthday cake- the Birthday Cake Trifle! Just a few simple ingredients and you have a delicious individual-sized baked birthday treat for you and your friends and family! I had fun baking it, and John and my family had fun eating it!
Start with a boxed confetti cake mix and the ingredients on the back, eggs and oil. Bake the cake according to the directions on the box.
While the cake is baking get out the ingredients for the whipped icing:
1 8-oz container whipped topping
1 large box vanilla pudding mix (Or whatever flavor you choose)
1 cup of milk (Half the amount recommended on the pudding box)
Mix all ingredients together and place in the fridge until it hardens slightly.
Now comes the fun part! Cut out a small square of cake and crumble a third of it into the bottom of an individual-sized trifle glass or a regular drinking glass like shown above. Place a spoonful of icing on top and smooth it over the cake.
Repeat two more times until you have 3 layers of cake and 3 layers of icing. Then sprinkle some rainbow sprinkles on the very top.
They're just so adorable! The cake was very soft, and the icing was so smooth; whipped icing is my favorite and is the only icing I'll eat all of if it's on cake. I was able to make 9 of these, with about 3 pieces left over, and no icing left. Definitely portion out your icing first! I didn't keep track of how much I was putting on mine until I got to the last couple and realized I didn't have enough. Oops!
