I love having simple dinners at my disposal. On nights that I just don’t feel like spending a lot of time in the kitchen, these pizza bagels are great! I often take trips to a discount bread store in our area, and many times they have bagels marked down to 50 cents a package that expire that day. I’ll buy a few and stick them in the freezer, then pull them out for nights like this, so this dinner is frugal as well as easy!
I usually have most of the ingredients at home, like my homemade pizza sauce in the freezer, shredded mozzarella from Sam’s Club, and pepperoni because I like to snack on it. Usually the only things I have to buy are mushrooms and olives for me and Allison.
First, layer pizza sauce on both halves of the bagel. My advice is to do the cheese next, because the cheese will stick to the sauce instead of falling off the sides if you put all the toppings on first. I learned this the hard way. Then put on your favorite toppings (the more jalapenos, the better), and broil the bagels in the oven for between 5-10 minutes, watching it closely to make sure they don’t burn. It’ll happen quickly, so pay attention! We usually serve these with a salad, steamed broccoli, or fruit.
It’s hit or miss whether Allison will eat these. She loves pizza, and she loves bagels, but put them together and she’ll sometimes just give it a weird look and be done with it. That’s toddlers for you, I guess. Either way, put this on your meal rotation and save time and money!
