4-Ingredient Pulled Pork Quesadillas

These BBQ Pulled Pork Quesadillas have only 4 ingredients! Melty cheese, tangy BBQ sauce, and full of protein!

Do you ever get bored of eating regular quesadillas?

My family has them for dinner a couple times a month. And they’re really good, but sometimes I just need something different.

Maybe it’s a different sauce, a different meat. Or maybe it’s using ingredients I never thought would go in a quesadilla.

These Pulled Pork Quesadillas have only 4 ingredients and are a great way to re-purpose leftover BBQ pulled pork!

They have the sweet tang of BBQ sauce, melty cheese, and a good dose of protein thanks to the pork.

Ingredients

  • Tortillas: I use one 8-inch flour tortilla for a quesadilla. You could use two instead, or even use a 10-inch tortilla if you like bigger quesadillas!
  • Pork tenderloin: I cooked mine in my slow cooker with a bit of chicken broth and a Nashville Hot Chicken seasoning. Use whatever seasonings you like!
  • Shredded mozzarella cheese: I feel like mozzarella goes best with pulled pork quesadillas. But cheddar would work great with these too!
  • BBQ sauce: Get as fancy as you want with this! I just used a store brand sauce because it was cheaper.

How to Make

Prep quesadillas

Lay out 4 tortillas on large plates. On the bottom half of each one, layer with mozzarella, pulled pork, and BBQ sauce. Fold the top half over the bottom half.

Cook and flip

Heat up a large skillet. Once it’s hot, I like to spray the bottom with cooking spray. Lay one or two quesadillas, depending on the skillet size, on the bottom, letting it cook for 2-3 minutes.

Flip it over, cooking another 2 minutes or until both sides are a nice golden brown.

Place the cooked quesadilla back on your plate and slice it in half. Serve with extra BBQ sauce and your favorite sides!

How to Store

If you made multiple quesadillas and want to eat them later, let them cool to room temperature and lay flat in an airtight container. Stick it in the fridge and eat it within 3 days.

How to Reheat

You can reheat these in a couple different ways:

  • Skillet (Best method): Heat a large skillet to medium heat and lay the quesadilla flat. Let it cook on both sides, 2-3 minutes each, until fully heated through.
  • Oven: Heat the oven to 350 degrees, and bake the quesadilla on a small baking sheet for 5-6 minutes.
  • Toaster oven: Heat the quesadilla for 3-4 minutes.
  • Microwave (Not recommended): Heat in 20-second increments until fully warmed. The microwave is your last resort, because your quesadilla won’t be crispy!

What to Serve With This

I consider pulled pork quesadillas to be from two different worlds, if you will. The Mexican-style world, and the pulled pork world.

So I think any sides that you would eat with either pulled pork OR a standard quesadilla would work here:

  • Chips and salsa
  • Coleslaw
  • Roasted vegetables like broccoli, green beans, or zucchini
  • Side salad

Ingredients

  • 4 8-inch flour tortillas
  • 1 pound pork tenderloin, cooked and shredded
  • 1 cup shredded mozzarella cheese
  • 1/2 cup BBQ sauce, plus extra for dipping

Instructions

  1. Lay 4 tortillas flat on plates. On the bottom of each one, place 4 ounces of pork, 1/4 cup of cheese, and 2 tablespoons BBQ sauce. Fold the top half over the bottom half.
  2. Heat a large skillet to medium heat. Place one or two quesadillas at a time, cooking for about 2 minutes, then flipping.
  3. Cook for another 2 minutes on the other side, until both sides are golden brown and the cheese has melted.
  4. Place cooked quesadillas on a plate and cut each one in half. Serve with your favorite sides.
