A great meal prep recipe
For busy nights, this is a great option to cook ahead of time and eat later. It’s a healthy and hearty meal that’s also great for leftovers, and only has a few minutes of prep time!
While this is in the slow cooker, you can easily make up a few side salads to go with it. Wouldn’t it be wonderful to bring a home-cooked meal to work and not have to worry about what you’ll eat?
Ingredients
Ground chicken
Frozen cheese ravioli
Shredded mozzarella cheese
Jar of pasta sauce
Substitutions/ Other additions
I kept this slow cooker recipe at 4 simple ingredients to help with overwhelm. But you’re more than welcome to add or substitute any of the below to take this to the next level!
Meat: Ground chicken was the only thing in my freezer. Feel free to substitute with ground beef, ground sausage, or ground turkey!
Sauce: If you have a favorite homemade tomato sauce or meat sauce, use that! Homemade sauce adds such a great flavor.
Ravioli: You can use another type of ravioli, but I recommend still using frozen ravioli to keep the correct cooking time.
Spices: The spaghetti sauce has some spices, but you can add more: Oregano, basil, Italian seasoning, garlic powder, etc.
Extra cheese: If you love your Italian food extra cheesy, add extra mozzarella. Or sprinkle some Parmesan cheese on there too!
How to make
In a large skillet, cook ground chicken on medium-high heat for 5-7 minutes until fully browned.
As you can see, I added some basil for extra seasoning!
Add half the jar of spaghetti sauce and mix to combine.
Pour the remaining sauce into the bottom of your slow cooker. Add half the ravioli, half of the meat sauce mixture, and a 1/2 cup of the cheese; then layer one more time.
Cook on the low setting for 3 hours until completely heated through.
How to store
Once this recipe has come to room temperature, store leftovers in an airtight container in the fridge. They’ll stay fresh for 3-5 days.
What to serve with this
I love heating up frozen broccoli as a side item! Other ideas include a nice side salad, roasted vegetables, garlic bread, or breadsticks.
I gotta say, my entire family enjoyed it. Even Allison, although full disclosure: I gave her plain ravioli. But she discovered she now likes ravioli, so yay us!
Next time you’re at the grocery store, pick up one or two bags of ravioli to keep in the freezer for easy meals like this!
