I bring you a very simple, super cute breakfast today! These toddler mini pancake muffins are as easy as using a box of pancake mix and your favorite toppings to create a fast breakfast, especially for picky eaters. Of course, they’re great for us moms as well, either breakfast or just an evening snack. I may be guilty of this.

It’s simple: Mix 2 cups of pancake mix with the recommended amount of water on the box (Mine said 1 1/2 cups), then spoon into a mini muffin tin. I actually had a little left over, so I made 3 regular-sized muffins, too. Then top with your favorite fruits or chocolate! I just used what I had on hand, which was strawberries and Ghiradelli dark chocolate chips… my favorite.

Bake at 350 degrees for about 12 minutes and check the inside with a toothpick! They fluff up and are light, sweet, and super delicious.

Of course, what does my toddler do? Pick out the three chocolate chips from each one, nibble at the two chocolate pancakes till they’re all gone, and barely pick at the strawberry ones. But at least she ate the actual strawberries I put on the plate. =)

What do you think would go good in these? I’m definitely doing blueberries once they’re in season, and perhaps some chopped bananas, or even just plain cinnamon. The choices are endless!
