Chicken Broccoli Potato Casserole- Quick to Make!

Need an easy casserole that’s quick to make? This Chicken Broccoli Potato Casserole is full of cheesy, ranch-seasoned goodness!

Bacon ranch anything is pure comfort food to me.

I don’t make it often. But when I do, I thoroughly enjoy it!

And when I look for meal ideas, I want ones that are easy to make and don’t take a ton of time.

This Chicken Potato Broccoli Casserole is full of my favorite things: cheesy chicken, frozen broccoli florets, and a flavorful ranch seasoning with bacon bits scattered throughout. This delicious meal is sure to please!

And it has a short cooking time, making this perfect for busy weeknights.

Is this meal healthy?

The word “healthy” is a very subjective word, so let me break down the basics of this easy dinner:

Chicken

I cooked boneless skinless chicken breasts, which are pretty low fat and considered a lean meat. This is full of protein, which keeps you full!

Potatoes

Potatoes are carbs and have some dietary fiber, which increases fullness. They’re also full of Vitamin C and some Vitamin B.

Broccoli

One of my favorite vegetables! Broccoli is full of calcium, iron, and potassium. And I use frozen broccoli here, which is just as nutritious as fresh.

Cheese and bacon

Bacon is a high-fat meat, but I’m only using a 1/4 cup of crumbled bacon in the entire recipe. It adds a TON of flavor.

Cheese also has fat and protein, along with calcium.

So in the end, I believe this casserole is a good well-rounded meal that’s meant to be enjoyed! And it’s a great way to get in a bunch of nutrients in one meal.

Ingredients

Cooked and shredded chicken

Potatoes (I used Russet potatoes)

Frozen broccoli, thawed

Unsalted butter

Ranch seasoning

Shredded cheddar cheese

Variations

Chicken: Use a rotisserie chicken or leftover chicken that you’ve shredded and frozen!

Potatoes: Red potatoes or gold potatoes would be good in this too.

Cheese: Monterey Jack cheese would be good too!

Seasoning: Use a packet of ranch seasoning or make your own with garlic powder, onion powder, and other spices.

How to make

Pre heat oven to 375 degrees. Heat a large pot of water and dice potatoes into small bite-sized pieces.

Boil the potatoes for 5-6 minutes until softened, then drain.

Add the cooked potatoes in a greased 9×13 casserole dish. Add butter and ranch seasoning and stir until the butter fully melts.

Sprinkle the following in an even layer: the bacon pieces, shredded cooked chicken, broccoli, then cheese.

Bake in the preheated oven for 20 minutes until fully heated and the cheese has melted.

How to store leftovers

Once this casserole has cooled to room temperature, store leftovers in an airtight container in the fridge. Use up within 3-5 days.

Can this be frozen?

I’ve never tried freezing this. You can try, but I know that sometimes potatoes lose their texture after being frozen and can be kind of gritty. Freeze at your own risk!

Side dish ideas

This meal is pretty complete meal with protein, carbs, and vegetables! If you wanted to add something extra, I recommend a side salad or even some kind of garlic bread or breadsticks.

You can also top this casserole with a few things for extra flavor:

  • Green onions
  • Red onion
  • Sour cream
  • Ranch dressing
  • Hot sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons ranch seasoning (Or one packet)
  • 1/4 cup bacon bits
  • 1 cup shredded cheddar cheese

Instructions

    1. Preheat the oven to 375 degrees. Heat a large pot of water and dice potatoes into small pieces.
