We’re doing a lot of pantry/cheap meals this week!
Earlier in the week I found myself with a bunch of Russet and sweet potatoes. So I cooked and pureed the sweet potatoes, and made soup with the Russet potatoes, and extra carrots and onions. All of it went in the freezer!
Someone on Facebook suggested I make sweet potato pie out of the puree because I was clueless about what to use the puree for. So, that’ll be in my future pretty soon; I can’t wait to try it!
So you might notice that I bought a TON of baking supplies this week: Flour, baking powder, salt, vanilla, oats… and other items that aren’t featured on the menu. What am I doing, you ask?
