Only two ingredients create the base for this super easy iced coffee! www.nogettingoffthistrain.com

The hot days of summer are here, and it's perfect weather for those nice cold drinks. Sitting on the couch on a hot afternoon sipping an iced coffee is just amazing! I could easily spend a lot of money on Starbucks or McDonald's, but I make my own quite often, for less money AND fewer ingredients! Get this, you really only need TWO ingredients. Yes, two.

Almond milk and frozen coffee cubes.

Why coffee cubes? Because I HATE it when I get an iced coffee that's full of ice and it melts so quickly in the summer heat, making my once wonderful coffee all watery and gross. When the coffee cubes melt, they gently mix with the almond milk and create a great flavor! I used about a cup of almond milk and one full cup of coffee to make the cubes.

Now, you can add whatever you want to flavor your coffee. I used honey and vanilla extract, but you could easily add chocolate syrup to make it an iced mocha, or even pumpkin spice when it gets closer to Fall! The possibilities are endless, but that simple combination of almond milk and frozen coffee cubes gives you the base of a delicious iced coffee! Keep a few cups worth of coffee in the freezer at all times so you never have to go without.

  4. I love iced coffee. I also use coffee ice cubes but never thought of using the cubes with almond milk. Do you find that your ice cube trays get gritty after a while?

    1. I haven't noticed them becoming gritty! I have these nifty ice cube trays that are made of.... something rubbery? Something that helps the cubes slide out easier.

  5. Coffee ice cubes is a great idea! I've never heard anyone else freezing coffee into cubes before.

  6. Great idea! Some days I can barely find time to brew coffee. I could do this once a week and be done!

  7. I'm the only coffee drinker in our house, so I love the idea of brewing once a week and freezing in cubes. Definitely going to try this with some coconut milk!
