Looking for an easy dinner that feeds a ton of people and still has enough for leftovers? You’ve found the right recipe! These slow cooker chicken parmesan sandwiches are the perfect addition to any recipe rotation. Shredded chicken is covered in seasoned tomato sauce and topped with lots of cheese because, of course, chicken parmesan is nothing without cheese! I was inspired by this recipe and modified it to use what I had in my kitchen.
What you need:
About 2 pounds chicken breasts
Crushed tomatoes
Diced tomatoes
Tomato paste
Garlic
Onion powder (Or an onion; we don’t usually keep onions in the house)
Basil
Oregano
Parmesan cheese
Mozzarella cheese
Place all ingredients except the chicken and cheese in the slow cooker and give everything a good stir. Place the chicken right on top and cook on low for 6-8 hours.
When the chicken is fully cooked, take it out and shred it. I love using my Kitchen Aid mixer for this!
Add the shredded chicken back to the slow cooker and stir it back in.
Place a spoonful of the chicken mixture on your favorite sub roll and top with plenty of cheese!
A little messy, but oh so delicious! And it makes SO much for leftovers; We have enough for lunch again for the next few days, PLUS we use whatever’s left for an amazing spaghetti sauce! Two dinners using one recipe; you can’t beat that!
