Recently I’ve been needing some super easy recipes. Ones that don’t have 100 ingredients and are relatively quick to make. With some very busy nights springing upon us, I need an easy weeknight dinner!
I’ve been obsessed with 5-ingredient dinners! They’re so simple, but every one I’ve made has been delicious. And they’re still healthy while using just a handful of ingredients!
This Salsa Verde Chicken is very versatile. You can keep it at the 5 ingredients, or add more for more flavor or variety.

A great meal prep recipe
Meal prep has saved my sanity on multiple occasions. I can prep things ahead of time for those busy weeknights. And this easy recipe can be made ahead of time to make dinner a breeze!
Ingredients
- Chicken- I used shredded chicken breast, but you can also use chicken thighs.
- Jar of salsa verde– Otherwise known as “Green salsa”. You can find this in most local grocery stores. Making your own salsa verde is another great option!
- Taco seasoning– I have a huge container of store-bought, but you can easily make your own.
- Jalapenos
- Greek yogurt
Additions/Substitutions
- Sour cream: If you’re not a fan of Greek yogurt, feel free to use sour cream instead. It still gives that creamy consistency!
- Vegetables: Bell peppers, white onions, green chiles
- Herbs/spices: Fresh cilantro, garlic powder, onion powder, chili powder, ground cumin, any of your favorite taco-inspired seasonings.
- Black beans
- Rice: I go back and forth between white rice and brown rice. For a lower-carb option, you can use cauliflower rice.
Can you use a rotisserie chicken?
A rotisserie chicken would be super easy to use in this recipe! Just shred chicken off the bone and dinner will be ready much more quickly.
I’ll even keep the bones and make a chicken broth out of it.
Can you make this in a slow cooker?
At the moment, I’ve only made this on the stove top. But for this recipe, you’re really just heating up the ingredients. So if you use the crock pot, I’d suggest cooking on LOW for 2-3 hours.
If you’re using raw chicken breast instead, cook on LOW for 5-7 hours.
How to make Salsa Verde Chicken
Add the chicken, salsa, taco seasoning, and jalapenos to a large pot.
Turn the stove to medium heat and let the mixture heat up, stirring occasionally, for about 10 minutes.
Remove from the heat and add the Greek yogurt, stirring until fully combined.
Serve in your preferred method: In burritos with flour or corn tortillas, on cilantro lime rice as burrito bowls, or salad, with your favorite toppings.
How to store
You can put any leftover chicken in an airtight container and keep in the fridge for 3-5 days.
How to freeze
Place any leftover chicken mixture in a gallon-size freezer bag and keep in the freezer up to 3 months.
If you don’t want to cook this ahead of time, you can put all the ingredients (Except Greek yogurt) in the freezer bag. When you’re ready to cook, just dump all the frozen ingredients into a slow cooker and cook that way.
As you can see, there are many different ways to customize this dinner. Just find something that works for your entire family!
What to serve with this
As you can see in the photos, I cooked rice and ate this as rice bowls. But you can eat this in a lot of different ways:
- With tortilla chips
- On top of a salad
- Make chicken tacos or burritos, using flour tortillas or corn tortillas

- 1 packet taco seasoning (Or 2 tablespoons)
- 1/4 cup jarred jalapenos
- 1 cup plain nonfat Greek yogurt
