In the Summer, I know that grilling out is super popular because it doesn't heat up the kitchen.
But here's my problem: Our grill is in the garage, in a hard-to-reach place. I'd have to move my car out of the garage and maneuver the grill around the trash bins. And my ADHD brain knows there's no way I'm doing that every time.

Those foil packet dinners are pretty popular, especially while camping! But you can achieve the same dinner by cooking it in your oven, too.
This Foil Packet Kielbasa is just like those grill packet meals, only baked in the oven for more convenience! Smokey sausage, tender potatoes, and delicious bell peppers and zucchini all come together for a super easy dinner, with simple cleanup!

Ingredients
This recipe serves 4 and is ready in about 25 minutes! Here's what you need:
- Kielbasa, fully cooked
- Baby gold potatoes
- Bell peppers (Any color is fine)
- Zucchini
- Butter
- Dijon mustard
- Onion powder
- Garlic powder
- Paprika
How to Make

Step 1
Preheat the oven to 400 degrees F. Cut 4 pieces of aluminum foil, approximately 4x18 inches each. Place them on a large baking sheet.

Step 2
In each piece of foil, divide all of the ingredients.

Step 3
Carefully bring all the foil edges together, folding over top to form a packet.

Step 4
Cook for 20-25 minutes until the potatoes are fork tender and the vegetables are softened.
How to Store
Once these cool to room temperature, you can take them out of the foil and store in an airtight container in the fridge. Use up within 3-5 days.
To reheat, remove the foil and either heat in the microwave in 30-second increments, or on the stovetop for 2-3 minutes on medium heat.
What to Serve with This
This could be eaten by itself as a full meal! But if you want some extra food, serve this with a side salad or freshly-baked bread.

Can you make these on the grill instead of the oven?
Yes you can, although I haven't done it with this recipe! You'll need to play around with the cooking time to see what works best.
Can I use another type of sausage?
Yes, you can substitute chicken sausage, pork sausage, or turkey sausage kielbasa! Keep in mind that I'm using pre-cooked kielbasa, so make sure you use that too or else you may have to increase the cooking time.
What other vegetables work well in foil packets?
You can use a variety of vegetables in this!
- Yellow squash
- Grape tomatoes
- Onions
Firmer vegetables, like broccoli or cauliflower, may need extra cooking time.
