Being able to throw a bunch of ingredients on a sheet pan and serve my whole family dinner? That’s my idea of an easy meal!

These Sheet Pan Sausage and Pepper Sandwiches are the perfect weeknight dinner. Italian sausage, red bell pepper, and soft onions on a toasted and cheesy bun.

  • Italian sausage links
  • Yellow onion
  • Red bell peppers
  • Sliced provolone cheese
  • Hot dog buns

Additions/Substitutions

  • Sausage: Feel free to use a turkey sausage or chicken sausage instead! If they’re already fully cooked, you may want to add those in later to prevent them from overcooking.
  • Bread: Instead of hot dog buns, you can use hoagie rolls!

How to Make Sheet Pan Sausage and Pepper Sandwiches

Cook the sausage and vegetables

Preheat the oven to 375 degrees. Place the sliced sausage and pepper and onion on a sheet pan.

Drizzle olive oil over top, along with salt and pepper if desired. Bake for 30 minutes, removing to stir after about 15 minutes.

Toast the buns

With 5 minutes left on the baking time, place the hot dog buns open-side up on another sheet pan. Top each bun with a slice of cheese, then bake for the last 5 minutes until the buns are golden brown and the cheese is melted.

Assemble the sandwiches

Divide the buns onto separate plates, then spoon the sausage and pepper mixture onto the buns. Serve with your favorite side items.

How to Store

Once everything has cooled to room temperature, store everything in an airtight container in the fridge.

I have divided containers, so I put the sausage mixture on one side and the bun on the other.

These will stay fresh for 5-7 days in the fridge.

Best Toppings for These Sandwiches

I love adding Dijon mustard to my sandwiches! It gives them a little kick.

But you could add any of the following, too:

  • Marinara sauce
  • Mayo
  • Mustard

FAQs

What kind of sausage works best?

Any type of uncooked sausage is good here! I used Italian pork sausage, but a turkey sausage would work too.

If you want to use an already-cooked sausage, I recommend adding them with 15 minutes of cooking time left. This helps ensure the sausages don’t over-cook and get burnt.

What kind of bread can I use?

If you don’t want the hot dog buns, you can use hoagie rolls/sub rolls, or even a sliced French bread.

Can I make this ahead of time?

Yes! Cook everything according to the instructions and store it all in an airtight container in the fridge.

If you’re taking this to a potluck, you can grab a foil pan and heat it up on a grill or in the oven. I recommend at least 10-15 minutes of heating.

Can I use frozen peppers and onions?

I haven’t tried it for this particular recipe, but I think it would work!

One thing to consider is that frozen vegetables might release a lot of water. Oven-cooking doesn’t seem to have this problem, but keep that in mind.

How can I make this low-carb?

To make this lower in carbs, serve the sausage and peppers on a lettuce wrap.

Certain companies also make low-carb breads and wraps, so that’s something to look into as well!

  • 5 uncooked Italian sausages, sliced into rounds
  • 2 red bell peppers, sliced
  • 1 large yellow onion, sliced
  • 1 tablespoon olive oil
  • 6 hot dog buns
  • 6 slices provolone cheese

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Place the sausage slices on a sheet pan, then the peppers and onion around it. Drizzle olive oil on top and bake for 30 minutes. Take out and stir halfway through.
  3. During the last 5 minutes, place the hot dog buns, open-side up, on a second sheet pan. Place a slice of provolone on each bottom, then bake for the last 5 minutes until the buns are brown and the cheese is melted.
  4. Spoon the sausage and pepper mixture onto the hot dog buns and serve with your favorite sides.
