
I have the hardest time coming up with side items for dinner! I usually go for the easy option of salad, but since Allison's still too little for that, I wanted something we all could enjoy. One week I decided to roast some broccoli because I've seen people raving about it, and I couldn't believe it. Allison devoured hers and asked for more! This is definitely going to be a staple side item at our house.
What you need:
2 small heads of broccoli
Vegetable/olive oil
Salt
Garlic powder
Parmesan cheese
Chop the broccoli into smaller pieces and place into a large bowl. Drizzle with the oil and sprinkle garlic powder and salt over the broccoli, and toss to coat. I didn't really measure how much oil and seasonings I put in there; I just like to experiment and see what works!
Place broccoli onto a baking tray and sprinkle with parmesan cheese. You can probably add the parmesan cheese while the broccoli's still in the bowl. Bake in a 400 degree oven for 16-20 minutes until the broccoli is crisp. Mine took about 16 minutes.
It's beautifully browned on top, and crispy but still soft enough that Allison could eat some of the smaller pieces. Absolutely delicious!
