Anybody else struggle to feed their toddler vegetables? I’m sad to admit that the only way Allison gets her vegetables is if I hide it in her bread items…. sometimes smoothies, but she doesn’t drink those often. That’s why her breakfast usually consists of a muffin or oat bar; because it’s so easy to add in some shredded carrots or zucchini and she won’t even notice. I know eventually she’ll branch out and try new things, but for now, I’m okay with sneaking in vegetables here and there.
Of course, it has to has chocolate chips. Add chocolate, and this girl’s all over it. Next time I’ll try to make it without the sugar. I think the chocolate chips are sweet enough that nobody will notice, and it will make the bars a bit healthier! This is a great summer breakfast, when zucchini’s on sale; I usually make at least two batches in a week because we just devour them! Definitely give these a try.
