I’m a busy mom, and I love recipes that don’t take a lot of time. Ones that have just a few ingredients, and bonus points if it doesn’t create a lot of dishes.

One pot pasta recipes are perfect for us, because pasta is the one thing I know my whole family will eat!

This One Pot Cheesy Turkey Taco Chili Mac is an easy recipe that makes a lot of leftovers. A lot of the ingredients are already in my pantry, and a quick trip to the grocery store can help me finish it off!

This is a hearty meal and pure comfort food, perfect for those cold busy weeknights.

Ingredients for chili mac

Ingredients

Lean ground turkey

Taco seasoning

Yellow onion

Garlic

Red bell pepper

Diced tomatoes

Kidney beans

Tomato sauce

Chicken broth

Elbow macaroni

Shredded cheese

CIlantro

Additions/Substitutions

Meat: Use lean ground beef instead

Beans: Use black beans or pinto beans instead of kidney beans

Broth: Use beef broth or vegetable broth

Cheese: Use a Mexican blend cheese, pepper jack cheese, or Monterey Jack cheese

Seasonings: Chili powder, cayenne pepper, garlic powder, onion powder, salt, black pepper. Use your own homemade taco seasoning!

Toppings: Dollop of sour cream

Pasta: Use pasta shells instead of macaroni

How to make

In a large pot, add ground turkey and cook on medium-high heat for 5 minutes. Add the onion and bell pepper and finish cooking until the meat is fully browned.

Add garlic and cook for another 1-2 minutes.

Add the beans, tomatoes, broth, water, and taco seasoning. Cover and heat to a boil, then turn down to medium heat and simmer for 15 minutes.

Add the uncooked pasta and simmer, uncovered, for 6 minutes or until the pasta is al dente.

Sprinkle the cheddar cheese on top and let sit for 5 minutes until the cheese melts.

Divide into bowls and top with fresh cilantro.

How to store

Once this has come to room temperature, store leftovers in an airtight container in the fridge. Use up within 3-5 days.

  • 1 packet taco seasoning
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon minced garlic
  • 15-ounce can diced tomatoes
  • 15-ounce can kidney beans
  • 8-ounce can tomato sauce
  • 1 3/4 cup chicken broth
  • 1 3/4 cup water
  • 8 ounces elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1/2 cup cilantro
