Looking for a new twist on pizza? These Pizza Quesadillas are easy to make and fun for the family!
Back when Allison was really little and we were living on a tight budget, I was looking for new and delicious recipes that were still cheap and I came across an interesting concept called pizza quesadillas.
I'd only had regular quesadillas- Mexican inspired- so I decided to make them one night. Needless to say, we're hooked. And this simple recipe is so customizable; you can add any of your favorite pizza toppings and it'll turn out great.

Ingredients
Flour tortillas or whole wheat tortillas- I've never used corn tortillas for this, but I'm not sure it would have the same texture.
Pepperoni slices (Either regular or turkey pepperoni)
Shredded mozzarella cheese
Other additions
Have other favorite toppings you like on a regular pizza? The ones below would be a great option!
Bell pepper
Black olives
Parmesan cheese
Mushrooms
Jalapenos
Banana peppers
Pizza sauce
Can I use two tortillas instead of one large?
Absolutely! This easy recipe is super customizable.
In fact, adding a second tortilla might be a great way to add more toppings because you don't have to worry much about overstuffing.
Just put all your favorite fixings on the bottom tortilla, then lay the top tortilla over that.
How to make

Lay the tortilla on a flat surface. Add a layer of cheese and pepperoni, and optional toppings, to one half of the tortilla.
Fold the tortilla in half and lay on a greased preheated large skillet, on medium heat. Cook 1-2 minutes until that side is golden brown, then flip and cook another couple of minutes.

Alternatively, you can use a George Foreman grill! I use this all the time to make quesadillas and paninis, and it's super quick and easy.

Remove from pan and onto a plate, and cut into 2-4 pieces with a knife or pizza cutter. Serve with pizza sauce and favorite side items.
I make my own pizza sauce now in the slow cooker. It makes a big batch, so I freeze it and use it for future homemade pizza!
How to store
You can store leftovers in an airtight container in the fridge for 3-4 days.
To reheat, I recommend using a toaster oven or reheating on the stovetop. Even though the microwave is an easy way to reheat, it just won't crisp it up to your liking!

What to serve with this
Typically, I heat up some frozen broccoli as an easy side. Alternatively, you could add a side salad or garlic bread!
This is such a fun recipe that you can get the kids involved in, too. Whether you need a quick lunch or an after school snack, this will do the trick! In just 10-15 minutes, you'll have an easy dinner the whole family will enjoy!
