November is Peanut Butter Lovers Month! This family’s been eating a lot more peanut butter in the recent months, as Allison has become a huge fan of peanut butter and jelly sandwiches (Finally, something she’ll eat!). And now that I’ve realized Kroger has natural peanut butter at a really low price, I find myself buying 3 or 4 jars at a time! A couple weeks ago I bought 4 boxes of Cheerios for 49 cents each after coupons, and while Allison likes to eat cereal every morning, I wanted to something else with it as a snack option. These Peanut Butter Cheerio Bars are a great, healthy snack! Here’s all you need:
- 3 cups Cheerios
- 3/4 cup peanut butter
- 1/4 cup honey
Place the peanut butter and honey in a bowl and microwave for about 20-30 seconds until it becomes almost a liquid. Pour that into a large bowl with the Cheerios and stir until thoroughly mixed. Press the mixture into an 8×8 casserole dish lined with parchment paper and put into the fridge for about 2 hours to let it set. Cut into 16 squares and enjoy!
I try not to eat much sugar anymore, so 1/4 cup of honey worked perfectly and it was still pretty sweet. You can use a 1/2 cup if you like yours a little sweeter. Try it for breakfast or a small snack!
