Actually, stay here. Because life is all about eating 80/20, and this is definitely in that 20 percent.

Cookies are an absolute weakness of mine. If we have homemade cookies in the house, watch out, because I’m tearing into those suckers. They’re so good… especially right out of the oven.

And now that I know how easy these Peanut Butter Cookies are, they just make into the house more often.

They only contain 3 ingredients: Peanut butter, sugar, and an egg. That’s it. Super easy to put together if you’re going to have company over.

Can you freeze these cookies?

I absolutely did! All you have to do is either freeze them on a cookie rack, or set them on a baking sheet lined with parchment paper. Once they’re completely frozen, you can put them in a quart-sized freezer bag.

This way, you can pull out just one at a time and not have to worry about having a whole batch of cookies laying around waiting to be eaten. Because trust me, they’ll be eaten!

Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a medium-sized bowl, then spoon out onto a cookie sheet lined with parchment paper. Use a fork to make a criss-cross shape on each cookie.
  3. Bake for 6-8 minutes until the bottoms are just slightly browned.

Notes

If freezing, freeze in a single layer on a cookie sheet lined with parchment paper. Once frozen, transfer to a quart-sized freezer bag.
