Italian Sub Salads

Easy Italian Sub Salad loaded with pepperoni, salami, mozzarella-provolone, and grape tomatoes. A quick no-cook lunch or dinner!

I have a confession: Subs are my actual weakness.

I'll go to any sub shop and order anything that has my favorite salami and other toppings.

But I don't just enjoy the sub flavor in sandwich form! I'll take it any way I can, including salads.

Ingredients for Italian sub salads, on a stovetop

Ingredients

This salad, which is basically a deconstructed sub, serves 4 people and is ready in 10 minutes!

  • Deli pepperoni
  • Deli salami
  • Shredded provolone/mozzarella blend
  • Grape tomatoes
  • Romaine lettuce
  • Store-bought Italian dressing

Additions/Substitutions

Just like with regular subs, you may want different ingredients in your salad! Here are a few things you can add or replace:

  • Banana peppers: A classic for Italian subs!
  • White onion
  • Black olives
  • Croutons
  • Straight up provolone: I couldn't find just shredded provolone at the store
  • Other meats: Ham, turkey, or whatever else is on sale at the deli counter
  • Homemade Italian dressing

How to Make

Diced salami and pepperoni on a cutting board

Step 1

Dice the pepperoni and salami into small pieces.

Step 2

In 4 bowls, divide the lettuce, pepperoni, salami, shredded cheese, tomatoes, and dressing, and serve.

How to Store Leftovers

This is important: Don't store the entire salad in one container!

Unfortunately, your whole salad will get soggy if you store as-is. I recommend separating as follows:

  • Lettuce in one container
  • Meats and cheese in one container
  • Dressing in one container

If you're taking this to work, keep all individual containers stacked together in the fridge. That way you won't forget anything!

What to Serve With This

This recipe itself is very low-carb. I recommend serving this with some kind of bread if you can:

  • Garlic bread
  • Breadsticks
  • A small sub roll

Can You Make This Ahead of Time?

You can prep the ingredients ahead of time, but like I said above: Don't store the entire salad in one container.

I like to chop up all the meats ahead of time. That way, when it comes time to make dinner, I just have to throw everything together!
