In the Summer, I'm always looking for quick dinners because I don't like to spend a lot of time in the kitchen. And using random kitchen appliances speeds up the process!

I'm not a fancy cook by any means, but like to branch out a little. And these Greek Chicken Bowls are just different enough for my family to make it on a regular rotation!

Ingredients

This recipe serves 4 people and is ready in about 30 minutes, with the rice cooker using up the majority of that time! Here's what's in it:

  • Boneless skinless chicken breast
  • Garlic powder
  • Oregano
  • Salt
  • White rice
  • Cucumber
  • Grape tomatoes
  • Tzatziki

How to Make

Step 1

Cook the rice according to the instructions.

Meanwhile, heat a large skillet with medium heat. Slice the chicken breast into small thin slices, then add to the skillet. Sprinkle with salt, garlic powder, and oregano, and cook for 5-7 minutes, stirring occasionally until the chicken is no longer pink and reaches an internal temperature of 165 degrees F.

When the rice is finished, divide the chicken and rice into 4 bowls.

Divide the cucumber, tomatoes, and tzatziki into all 4 bowls, and serve.

How to Store

Store individual servings in an airtight container in the fridge, and use up within 3-5 days.

You can also put the tzatziki in another small container, so it doesn't make your meal soggy.

How to Eat as Leftovers

Honestly, I don't reheat this recipe; I eat it cold the next day. Part of that is because I add the cucumbers and tomatoes to the container before I refrigerate it; and I don't want those heated up.

But if you want to heat up the rice and chicken, that's fine. Just separate them from the veggies first!

What to Serve With This

This is meant to be a complete meal, with your protein, carb, and vegetable! But keeping with the Greek-inspired theme, you can serve this with naan and hummus.

Yes, it's pretty easy to make your own! Use your favorite recipe if you have one; I just buy store-bought because it's easier for me.
