For our anniversary this past Saturday, I thought it’d be nice to cook a special breakfast for the family. I LOVE stacked and stuffed pancakes, especially the ones at Bob Evans, so I thought I’d make something similar yet simple using what I had at home. These strawberries and cream stacked pancakes were wonderful!

First, just start with your favorite pancake recipe. I used boxed mix because that’s what I had on hand, but here’s my favorite recipe for buttermilk pancakes!

Next, chop about a cup of strawberries. Cut some into little pieces to add to the pancake mix, then simply slice a few more to place on top.

Using a 1/4 cup measuring cup, spoon out the mix onto a hot griddle, flipping when the edges start to bubble.

While the pancakes are cooking, in a small bowl mix in a half cup of whipped cream cheese and a tablespoon of strawberry jelly. You can get creative with this depending on what you have; simply buy some strawberry cream cheese, puree some fresh strawberries to add in… the possibilities are endless.

Once the pancakes are done, add a spoonful of the cream cheese mixture on top of one pancake, then top with another pancake. Repeat until the stack is as high as you can eat, then top with strawberries and/or syrup!

The pancakes are really easy to freeze too, if you made a lot. Just place them on a baking sheet lined with parchment paper and freeze them, then place in a freezer bag once fully frozen. Enjoy!

Yield: 12-14 pancakes

Ingredients

  • 2 cups of boxed pancake mix, mixed according to directions (or use your favorite pancake recipe)
  • 1 cup of strawberries, chopped
  • 1/2 cup whipped cream cheese
  • 1 tablespoon strawberry jelly

Instructions

  1. Prepare pancake mix according to directions. Add about half of the strawberries, mixing to combine.
  2. Use a 1/4 cup measuring cup to spoon the pancake mix onto a hot griddle, flipping when the edges start to bubble.
  3. Mix together the cream cheese and strawberry jelly in a small bowl, then set aside.
  4. When the pancakes are fully cooked, add a spoonful of cream cheese to the top of one pancake, then top with another pancake, adding layers until the desired stack size is reached. Top with remaining strawberries.
