I am SO excited right now. In case you missed it, John started his new job last week! I’m so happy to be back to a regular schedule. Now that we have an income again, we’ll be raising our grocery budget in the next week or two. Next Monday I will definitely have an update on that! It’ll be nice to be able to start stocking my pantry and freezer again.

Somehow I was over budget last week, so I had a couple dollars less to work with. It all worked out because the things I wanted to buy at Kroger were sold out, and then I forgot to buy blueberries to make muffins for a friend (oops), so we’re actually under budget this week. Having a date night also helps! Here’s what I bought this week.

Almond butter* and honey* sandwiches (Bought bread at the outlet store, used cash)

Ground beef rice casserole* (Meat and rice and pantry), frozen broccoli
Date night- Going to see Jim Gaffigan!
Chicken chimichangas* (Chicken in freezer), sweet potatoes
Pancakes, eggs
Leftovers
Ham and cheese calzones (Making pizza dough), zucchini rice– Bringing to a friend

Breakfast

I read your blog from March, and just had to find an updated blog! I'm so happy your hubs found a job. My little family may be in the same place soon. Luckily he does some work with an uncle, which is something, and I work, but my pay won't cover the rent. And I've recently been diagnosed with celiac disease. When it rains, right! The first thing I told my hubs was that we need to pray! So I was very happy to see that was one thing you suggested. Good luck to you and your family! !

Thank you, Jen, for sharing this! I'm so sorry you're about to go through a rough patch. I'll definitely say a prayer for you all. I'm not an expert on anything gluten-free, but I follow Kimberlee on www.thepeacefulmom.com who feeds I think 3 out of 6 family members gluten free. She posts her meals as well, so hopefully you can get some good ideas from her! Good luck!
