Let me say that I’m so glad we were able to buy ground beef and chicken last week. We can eat meat again for awhile! =) Having both available really opens up my recipe possibilities, but I’m still trying to make it stretch as much as I can. I love the Chicken Parmesan recipe we’re making; it makes enough for us to have leftovers plus even more to make another recipe, so that’s what I’m doing this week to cut costs! I love re-purposing food.

I’ve become addicted to almond butter and honey sandwiches, too. I could seriously eat them like twice a day. That’s another frugal meal added to the rotation, including this week! I found myself with a bit of money left over, so I bought protein bars for church and got a couple things that were on clearance. Here’s what I bought this week:

Poor man’s lasagna (Omitting the beef and using leftover sauce from the chicken parmesan), salad
Cheesy beans and rice* (Everything in pantry/freezer), chips* and salsa*
Almond butter* and honey* sandwiches, banana
Cheeseburger meatballs* (Attempting my own cheese sauce instead of Velveeta), rice*, salad
