We decided to use the last big ham that we had in the freezer! Now we get to wait until the holidays to stock up again, but I’m glad it’s lasted us this long. Luckily we love ham, because that’s pretty much all we’re eating this week!

I’ve been sticking to having breakfast for dinner once a week, and something rice and beans related once a week as well. I was really surprised to see how cheap breakfast can be if you do it right! Unfortunately, this kind of means I only like having pancakes for dinner now instead of for breakfast; they just don’t fill me up in the mornings, I’ve found, and it feels amazing to have something sweet for dinner! If you’re having trouble with your grocery budget, try doing both breakfast and rice/beans every week to see how far that’ll stretch your money.

Oh, we also got bananas. Like, 10-15 pounds of bananas. My dad brought us a ton of them over the weekend, so I’m using those to make Allison’s breakfast muffins, multiple batches of pancakes, and maybe some other version of muffins to freeze and snack on. Don’t let any banana go to waste!

Ham and cheese calzones (Using bread machine pizza dough), frozen broccoli*

Blueberry cream cheese french toast, eggs (I made bread last week and one of the loaves will be used to make this)
Bean and cheese burritos* (From freezer), Spanish rice*
Ham, egg, and broccoli casserole

Banana pancakes (Will make a ton to freeze for later)

Allison’s Breakfast and Lunch

Breakfast: Banana oat muffins, cereal*
Lunch: Peanut butter* and jelly* crackers, cheese*, yogurt with strawberry puree

I have to meal plan and I plan our dinners according to what is for sale and what I have stock-piled in the freezer from previous sales or co-op purchases. Now I want breakfast for dinner!
