Holy cow, I’m recovering from an awesome weekend. Cookouts, cookie cake, King’s Island birthday celebration… I ate enough food to last me all week! I somehow fit in all the shopping this week, and I did really well! I’m getting out one of the hams from our freezer and we’ll be eating from that all week… hope we like ham. =) Just kidding, we love it. Thankfully Aldi had some great prices on produce, so we’re actually eating pretty good! Let’s see what I got.

Oooh that biscuits and gravy casserole looks like something my husband would enjoy! I don't eat meat so I might be able to substitute with some imitation stuff? I love breakfast casseroles.
I always look forward to these posts! My husband got laid off last week so they will help me a lot, I'm sure! Thankfully I have a lot of things coming up in my garden now (we get started much later here in the northeast) and we have plenty of eggs from our chickens and ducks.
Hope your husband finds a new job soon, thinking of you guys!

I'm so sorry your husband is out of work now, too! Unfortunately that seems to be going around. I would love to have chickens for my own eggs, but I just don't think I'm cut out for that, haha. =)
You probably don't even need to add the sausage in the casserole! I'm sure adding some vegetables like bell peppers would be good as well!
