I don’t know about you, but this week is going to be absolutely crazy. I’m gone 5 out of 7 nights this week due to church commitments, plus a family Christmas on Saturday morning. It’s fun, but busy! This week’s menu is pretty simple; there are a couple recipes I’m cooking that make a ton, so one is being refashioned into a new dinner, and the rest is just there for leftovers. That’s why you see two leftover nights; it definitely helps when we’re busy!
I’ve been buying a ton of Greek yogurt lately, as you may have noticed. I can’t get enough of this stuff! It’s more expensive than regular yogurt, but it packs a ton of protein into a serving. I’ll mix it with peanut butter and have it as a snack, or use it instead of sour cream. I don’t even taste a difference and it’s a great way to get more protein in my day. So far, Sam’s Club is the cheapest place to buy it!
