Hello, Winter! You’re finally here and you brought tons of snow!
I was pretty happy about the snow for a little bit, and now I’m ready for warmer weather. Snow’s pretty, except when you have to drive in it.
January is almost over, and it seems to have gone by a lot more slowly for some reason. Maybe because there weren’t as many activities as December. It’s pretty good to have a slow month, right?
As a result, I didn’t take as many pictures. That’s probably why most of them are of Allison… and at home. It’s just no fun being cooped up when it’s so cold. Here’s what’s been going on in the Bacon household this month:
1.) We started off our new year with a trip to our local cafe for lunch/brunch! I had a huge chicken salad, and Allison and John both had pancakes because, well, pancakes are Allison’s favorite food group. This cafe makes chocolate chip pancakes the size of your head, and are so amazing.
2.) Allison got cute superhero accessories for Christmas and had to show them off. She’s obsessed with the DC Superhero Girls and will watch the LEGO movies at least a couple times a week.
3.) I’ve gotten Allison into the nerdy stuff now, like Zelda. She’s been watching me play Ocarina of Time on the 3DS, and she drew this picture- Link, Epona the horse, Malon, and a stable. I’m pretty proud of her creativity!
4.) We got insanely bored one night so I made a ninja laser course for her to pass through. It didn’t work too well because I accidentally made a huge gap she could just crawl right under; but she actually had a lot of fun with it! She took her stuffed animals back and forth to rescue them.
5.) I don’t get many pictures of these two; but when I do, they’re adorable. Pigtails on Allison are just the best thing.
6.) On our first huge snowstorm of the year, we went outside and jumped around in the snow; and then built this dinky snowman. It’s small, it’s lopsided, but it’s ours. With plastic button eyes and a carrot stick nose.
7.) Have you ever done something that terrified you? I taught a class on Healthy Meal Planning a couple weeks ago, and the week leading up to it I had so many doubts. What if I froze? What if no one came? What if no one liked it? Well, 7 people braved the snow and LOVED it. Sometimes you just have to jump in and do it scared to see if it’ll work.
8.) Tofu. I’ve never had tofu before this fast, and actually it’s not too bad. It’s got a mushroom-y taste and texture, and I love my mushrooms. I went out to dinner with some friends and got tofu to make my meal (mostly) fast friendly. I think the tofu was fried a little which isn’t allowed on the Daniel Fast, but I did my best.
9.) “Mommy, I’m making a place where you have a funeral!” A cemetery. She was building a cemetery, complete with a casket. I’m still not sure if I should be terrified or not.
Current workout: Transform 20 is the newest Beachbody program that’s available for beta testing, and I’ve committed to that routine for the next 6 weeks. Shaun T leads, and you use an aerobic stepper for both cardio and strength training. Sounds strange, but guys, I’m dying after each 20 minute workout. Favorite thing of the month: My Instant Pot, friends. Now, I’ve yet to cook an actual meal in it yet- I’m saving that for after the Daniel Fast. But I’ve been cooking dried beans in it every 2-3 days and I fall more in love with it every time.
I used to soak my beans overnight, then cook them in my slow cooker for 4-6 hours and MAYBE they’d be done. Now, I rinse and put the dried beans in my Instant Pot and set it for 25-40 minutes depending on the type… and they’re done. Just an hour of my time, it’s so amazing.
Currently reading: Wheel of Time: A Crown of Swords. It’s book 7 of the series by Robert Jordan, and it’s finally starting to get interesting. I’m listening to the audiobooks, which are between 30-40 hours long- but at 1.2x speed, I can shave off a few hours. I took a break between books 6 and 7 to listen to For the Love by Jen Hatmaker, and that was only 5 hours long… so that only took like 3 days to finish, haha.
I listen to audiobooks in little pockets of time. The hour before Allison wakes up, while I’m doing chores when Allison’s in school, when I’m driving somewhere by myself… it’s amazing how much time you can find if you really look.
